Ground bison on pretzel buns. Main cheese was a smoked mozzarella. Secondary cheese was Whole food’s most expensive aged chedder. Salt and pepper on the patties, cooked medium.
The verdict..?
Best burgers I’ve ever made. It’s not even close. The cheese is so strong, but it pairs perfectly with the dense pretzel bun. The bison seems a lot juicier than a comparable cow circle, but flavorwise I’d be hard pressed to distinguish between the two.
Tomorrow I’ll repeat... With ground lamb!

I guess that could be alright. Not soft and mushy, but not eating a bread brick.
I find food is a lot about ratios. Too much meat or too much bread and it's not as good. I always thought the pretzel or brioche buns looked too dense to be that good.

On the inside, theyre medium to soft side, but have a nice dense crust, so they don’t get mushy and fall apart when condiments are added. Like a large soft pretzel. .

You definitely have to change the ratio of meat/cheese/bun when using a pretzel bun, otherwise yeah, the dense bun will drown out everything else. But when you get it right.... Oh man

Called it!! Pretzel buns will always reign supreme over regular buns for me.
I also have to put a fried egg on any burger I make/order now.
Glad the bison meat worked. I’m excited to hear about the lamb ground.

The big Kings Hawaiian burger buns are the best with pulled pork! Im glad my kiddo finished the last four little rolls, as a 17 year old has a faster metabolism than a 50 year old!
